INGREDIENTS:
๐Ÿ”น Extra virgin olive oil (I used Early Harvest Greek EVOO)
๐Ÿ”น 4 slices Tuscan country bread, about ยฝ-inch in thickness (or similar hearty bread)
๐Ÿ”น Extra virgin olive oil to drizzle on bread
๐Ÿ”น 1 15-ounce can chickpeas, drained and rinsed
๐Ÿ”น 1 to 2 garlic cloves, minced
๐Ÿ”น 1 to 2 spring onions, white and green parts, trimmed and chopped
๐Ÿ”น 1 vine-ripened tomato, chopped
๐Ÿ”น Kosher salt, to taste
๐Ÿ”น 1 teaspoon ground cumin
๐Ÿ”น 1 teaspoon Aleppo pepper
๐Ÿ”น 2 hard-boiled eggs, peeled and sliced
๐Ÿ”น Fresh parsley for garnish
